Description
Bharta Recipe Egg is a bold and comforting Indian dish made with mashed boiled eggs, cooked in a richly spiced tomato-onion masala. Perfect for quick meals or meal prep, this protein-rich recipe pairs wonderfully with roti, rice, or wraps.
Ingredients

4–6 hard-boiled eggs, peeled and mashed

2 medium onions, finely chopped

2 medium tomatoes, finely chopped

2–3 green chilies, finely chopped (adjust to taste)

1 tbsp ginger-garlic paste

2 tbsp cooking oil (vegetable oil, mustard oil, or ghee)

1 tsp cumin seeds

½ tsp turmeric powder

1 tsp red chili powder

½ tsp garam masala

Salt, to taste

Fresh coriander leaves, chopped (for garnish)

Optional: 1 tsp kasuri methi (dried fenugreek leaves), lemon juice
Instructions

Boil & Mash Eggs:
Boil eggs for 10–12 minutes. Cool, peel, and mash roughly. -
Temper the Oil:
Heat oil in a pan, add cumin seeds, and let them splutter. -
Sauté Aromatics:
Add chopped onions and cook until golden. Mix in ginger-garlic paste and sauté till fragrant. -
Cook Tomatoes & Spices:
Add tomatoes, turmeric, red chili powder, and salt. Cook until oil separates from the masala. -
Mix in Eggs:
Add mashed eggs, stir to combine. Cook 3–5 minutes to absorb flavor. -
Finish & Serve:
Sprinkle garam masala, kasuri methi, and fresh coriander. Squeeze lemon juice over the top and serve warm.
