This bold and creamy Cajun Potato Soup is loaded with sausage, spices, and tender potatoes. One pot, full comfort. Meal prep and freezer friendly!
Ingredients

1 lb baby or russet potatoes, diced

1 lb smoked sausage or Andouille, sliced

1 medium onion, diced

2 celery stalks, diced

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 tbsp flour

3 tbsp butter

1 tsp Cajun seasoning

1/2 tsp smoked paprika

Salt and black pepper, to taste
Optional Toppings:

Crumbled bacon

Sour cream or Greek yogurt

Instructions

Cook the sausage
Brown sausage in butter for 4–5 minutes. Remove and set aside. -
Sauté veggies
In the same pot, cook onion, celery, and garlic for 4 minutes. Stir in Cajun seasoning and paprika. -
Add flour and broth
Sprinkle in flour, stir for 1 minute. Slowly pour in broth while whisking. -
Cook the potatoes
Add diced potatoes. Simmer for 15–20 minutes until tender. Mash some for extra creaminess. -
Add cream and sausage
Return sausage to the pot. Stir in heavy cream. Simmer for 5–10 minutes.

Season and serve
Add salt and pepper to taste. Serve with toppings like cheese, green onions, or bacon.

For thicker soup: Mash a few cooked potatoes in the pot before adding cream.
