Description

This bold and creamy Cajun Potato Soup is loaded with sausage, spices, and tender potatoes. One pot, full comfort. Meal prep and freezer friendly!


Ingredients

  • 1 lb baby or russet potatoes, diced

  • 1 lb smoked sausage or Andouille, sliced

  • 1 medium onion, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 tbsp flour

  • 3 tbsp butter

  • 1 tsp Cajun seasoning

  • 1/2 tsp smoked paprika

  • Salt and black pepper, to taste

Optional Toppings:

  • Shredded cheddar cheese

  • Chopped green onions

  • Crumbled bacon

  • Sour cream or Greek yogurt

  • Fresh parsley for garnish


Instructions

  • Cook the sausage
    Brown sausage in butter for 4–5 minutes. Remove and set aside.

  • Sauté veggies
    In the same pot, cook onion, celery, and garlic for 4 minutes. Stir in Cajun seasoning and paprika.

  • Add flour and broth
    Sprinkle in flour, stir for 1 minute. Slowly pour in broth while whisking.

  • Cook the potatoes
    Add diced potatoes. Simmer for 15–20 minutes until tender. Mash some for extra creaminess.

  • Add cream and sausage
    Return sausage to the pot. Stir in heavy cream. Simmer for 5–10 minutes.

 

  • Season and serve
    Add salt and pepper to taste. Serve with toppings like cheese, green onions, or bacon.

Notes

  • For thicker soup: Mash a few cooked potatoes in the pot before adding cream.

  • For milder flavor: Use regular sausage instead of Andouille and reduce Cajun spice.

  • Dairy-free version: Swap cream for full-fat coconut milk or cashew cream.

  • Great for freezing: Let it cool, then portion and freeze in airtight containers for up to 2 months.
