Ingredients

1 lb dried black beans (or 4 cups canned, rinsed and drained)

2 tbsp olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 tsp chipotle chili powder

1 tsp ground cumin

1 tsp oregano (preferably Mexican)

2 cups vegetable broth (1 cup if using canned beans)

1 bay leaf

2 tbsp fresh lime juice

Salt and pepper, to taste
Optional Add-ins:

2 tbsp fresh cilantro, chopped

Instructions

Prep the Beans:

If using dried beans, rinse, soak overnight, and drain. If using canned, rinse thoroughly.

Sauté Aromatics:

Heat olive oil in a pot over medium heat. Add onion and sauté for 3–5 mins. Add garlic and cook for 1 more minute.

For dried beans: Add beans, broth, and bay leaf. Simmer for 60–90 mins.
