  • 2 tbsp olive oil

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 1 tsp chipotle chili powder

  • 1 tsp ground cumin

  • 1 tsp oregano (preferably Mexican)

  • 2 cups vegetable broth (1 cup if using canned beans)

  • 1 bay leaf

  • 2 tbsp fresh lime juice

  • Salt and pepper, to taste

Optional Add-ins:

  • 1 jalapeño or serrano pepper, finely chopped

  • 2 tbsp fresh cilantro, chopped

  • ½ tsp smoked paprika


Instructions

  1. Prep the Beans:

    • If using dried beans, rinse, soak overnight, and drain. If using canned, rinse thoroughly.

  2. Sauté Aromatics:

    • Heat olive oil in a pot over medium heat. Add onion and sauté for 3–5 mins. Add garlic and cook for 1 more minute.

  3. Build Flavor:

    • Add chipotle chili powder, cumin, oregano. Stir 30 seconds until fragrant.

  4. Cook the Beans:

    • For dried beans: Add beans, broth, and bay leaf. Simmer for 60–90 mins.

    • For canned beans: Add beans and 1 cup broth. Simmer 15–20 mins uncovered.

  5. Season & Finish:

    • Stir in lime juice, salt, pepper. Adjust flavor as needed.

  6. Optional:

    • Stir in jalapeño, cilantro, or smoked paprika before serving.

  • For quicker prep, use canned beans.

  • To make oil-free, sauté aromatics in water or broth.
