For the Cake:

  • 2 cups (250g) all-purpose flour

  • 1 cup (200g) granulated sugar

  • 3 tablespoons (20g) unsweetened cocoa powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup (240ml) plain kefir

  • ½ cup (120ml) vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

Optional Add-ins:

  • ½ cup chopped walnuts or pecans

  • ¼ cup shredded coconut

For the Chocolate Glaze:

  • 2 tablespoons cocoa powder

  • 1 cup powdered sugar (sifted)

  • 3 tablespoons butter (melted)

  • 23 tablespoons milk (warm)

  • ½ teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking sheet.

  2. Whisk dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.

  3. In another bowl, combine wet ingredients: eggs, kefir, oil, and vanilla.

  4. Mix wet into dry until just combined—don’t overmix.

  5. Pour batter into pan and bake for 25–30 minutes, or until a toothpick comes out clean.

  6. Let cool for 10 minutes in the pan, then transfer to a wire rack.

  7. Make glaze: mix cocoa powder, powdered sugar, melted butter, and milk until smooth. Stir in vanilla.

  8. Glaze cooled cake and spread evenly. Add toppings like coconut or nuts if desired. Let set before slicing.

Notes

  • For richer chocolate flavor, add an extra tablespoon of cocoa.

  • Store in an airtight container for up to 5 days, or freeze individual slices for up to 2 months.

  • For a tangier flavor, use whole milk kefir instead of low-fat.
