-
3 cloves garlic, minced
-
1 cup heavy cream
-
½ cup chicken broth
-
½ cup grated Parmesan cheese
-
½ tsp crushed red pepper flakes (optional)
-
½ cup sun-dried tomatoes (oil-packed, drained and chopped)
Pasta:
-
8 oz penne, fettuccine, or pasta of choice
-
Fresh basil or parsley (for garnish)
Optional Add-ins:
-
1 cup spinach or arugula
-
½ cup sautéed mushrooms or roasted red peppers
-
Burrata or mozzarella pearls
Instructions
-
Sear Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Sear in olive oil until golden and cooked through. Remove and set aside.
-
Make Sauce: In the same pan, sauté garlic and sun-dried tomatoes. Deglaze with chicken broth, then add cream, red pepper flakes, and Parmesan. Simmer until slightly thickened.
-
Cook Pasta: Boil pasta until al dente. Reserve ½ cup pasta water, then drain.
-
Combine: Slice chicken and return to the pan. Add pasta and toss to coat. Loosen with pasta water if needed.
-
Serve: Garnish with herbs, more cheese, and olive oil. Serve hot.
Notes
-
Use thin chicken cutlets to speed up searing and ensure even cooking.
-
For a lighter version, sub in half-and-half for heavy cream.
-
Use burrata or shredded mozzarella for extra cheesiness.
-
Store leftovers in an airtight container in the fridge for up to 3 days.
