This hearty Southern swamp soup recipe features turnip greens, smoked sausage, and creamy beans simmered in a rich, savory broth. It’s easy, comforting, and perfect for a cozy family dinner or gathering.
Ingredients

1 lb turnip greens (washed and chopped)

12 oz smoked sausage (sliced)

1 (15 oz) can Great Northern or cannellini beans (drained and rinsed)

1 small onion (diced)

3 garlic cloves (minced)

4 cups chicken broth

1 tbsp olive oil

½ tsp smoked paprika

¼ tsp crushed red pepper flakes

Salt and black pepper (to taste)
Instructions

Sauté Aromatics:
Heat oil in a large pot over medium heat. Add onions and garlic, cook until soft. -
Brown Sausage:
Add sausage slices and cook for 5–7 minutes until browned. -
Add Greens:
Stir in chopped turnip greens and cook until slightly wilted. -
Add Broth & Beans:
Pour in chicken broth and add beans, paprika, red pepper flakes, salt, and pepper. -
Simmer:
Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes until greens are tender. -
Serve:
Taste and adjust seasoning. Serve hot with cornbread or over rice and garnishe with chopped herbs.

For a thicker soup, mash a few beans against the side of the pot during simmering.
