Description
This refreshing and easy cold spaghetti salad is bursting with Mediterranean flavors. Tossed with crisp vegetables, feta, olives, and a zesty homemade dressing, it’s the perfect light dish for summer lunches, picnics, or meal prepping. Quick to make, delicious to eat!
Ingredients

300g spaghetti (whole-grain if possible)

200g cherry tomatoes, halved

1 red bell pepper, thinly sliced

1 small cucumber, thinly sliced

50g black olives, halved

100g feta cheese (optional), crumbled

Handful of fresh basil, chopped

Salt and pepper, to taste

2 tbsp lemon juice

4 tbsp extra-virgin olive oil

1 tbsp red wine vinegar

1 garlic clove, minced
Instructions

Cook spaghetti in salted water until al dente (8–10 minutes). Drain and rinse with cold water.

Whisk olive oil, lemon juice, vinegar, garlic, salt, and pepper in a bowl.

In a large bowl, mix tomatoes, cucumber, bell pepper, and olives. Toss with half the dressing.

Add cooled spaghetti and gently stir.

Top with feta and chopped basil, drizzle the rest of the dressing. Toss lightly.

Cover and chill for at least 30 minutes before serving.
Notes
Substitute feta with chickpeas or grilled chicken for a protein boost. Whole-grain pasta adds extra fiber and nutrients.
